A layered salad of sliced sirloin, orzo, asparagus and avocado, topped with a creamy caramelised onion dressing. It can be built in jars, which suits a packed weekday lunch in warming spring weather.

Ingredients

  • Dressing
  • 30g butter
  • 1 large onion, thinly sliced
  • 5ml (1 tsp) garlic, crushed
  • 5ml (1 tsp) wholegrain mustard
  • 250ml (1 cup) sour cream
  • 125ml (½ cup) milk
  • salt and freshly ground black pepper, to taste
  • Salad
  • 200g orzo pasta
  • 300g asparagus spears
  • 4 (600g) sirloin steaks
  • olive oil/avocado oil, to brush
  • squeeze fresh lemon juice
  • 2 avocados, thinly sliced
  • handful rocket

Method

  1. Melt 30 g butter in a sturdy pan on medium heat and cook the sliced onion slowly for 20 to 25 minutes, until golden and soft. Add the garlic and mustard and cook 2 more minutes.
  2. Let the onions cool, then blend them with the sour cream and milk until smooth. Season to taste.
  3. Boil the orzo in salted water for 8 to 10 minutes, until al dente, then drain.
  4. Blanch the asparagus in salted water for about 1 minute, cool it in ice-cold water, drain and cut into pieces.
  5. Oil the steaks and sear them on a very hot griddle for 2 to 3 minutes per side for medium rare. Rest them, then slice thinly.
  6. Toss the avocado slices with a squeeze of lemon juice so they stay green.
  7. Fill each jar in layers: dressing, orzo, avocado and asparagus, then steak, finishing with rocket.

Elections Hot

What you need to know

Voting in the 2026 Local Government Elections is under way at 23,696 stations, and the Electoral Commission of South Africa (IEC) reported a smooth start on 4 November. Stations opened at 7am and close at 9pm, and by 10am preliminary figures showed 3,523,691 voters had cast ballots.

There were problems: unused ballot papers were stolen from Mnyameni Secondary School near Durban, police opened a case, and the IEC relieved the station staff of duty. Some voters in Tshwane said they were turned away for wearing party shirts, but the IEC denied this and said only mayoral candidates' entourages were barred.

ANC chairperson Gwede Mantashe told members not to query the results or discredit the IEC, while the IEC said false online claims show routine procedures as fraud.

US mid-terms Heating up

What you need to know

Democrats won back both the US House and Senate in the midterm elections held on 3 November, according to media projections. Exit polls showed voters were angry about high prices and the direction of the country, and rebuked President Donald Trump.

Before the vote, US forces struck targets on Qeshm Island in Iran, while Republicans struggled to defend the war against Iran on the campaign trail. Iranian officials said US voters rejected the war, and Tehran stayed on high alert for possible new US strikes.

Markets reacted, with the dollar hitting a one-month low and the rand firming to around R16.55, as analysts pointed to fears of gridlock in Washington.
